SAMPLE HEALTH AND SAFETY TIP

Is it safe to sample cookie dough before baking it?

Foods containing raw eggs, such as homemade ice cream, cookie dough, cake batter, and eggnog carry the risk of Salmonella. Commercial products do not carry this risk because they are made with pasteurized eggs (i.e., eggs that have been heated sufficiently to kill bacteria). They may also contain an acidifying agent that kills bacteria.

Substituting pasteurized eggs for raw eggs will make your homemade dough, batter, and other food safe for sampling. Pasteurized eggs can be found in the grocer's refrigerated dairy case.
